Paella Barclelona
1 Cup Uncooked Rice
2 Medium Chicken Breasts --
cooked & diced
1 Can Artichoke Hearts -- small
can
1 Cup Peas
1 Large Onion -- chopped
2 Medium Red Bell Pepper --
chopped
3 Cloves Garlic
1/2 Cup Tomato Puree
3 Cups Chicken Stock
3 Tablespoons Olive Oil
1 Pinch Saffron
1 Teaspoon Paprika
Salt And Pepper -- to taste
Parsley -- for garnish
Saute onion & garlic in
olive oil unti transparent. Add all but parsley & artichokes.
Simmer gently 25 minutes until rice is done. Arrange artichokes
& parsley on top. Serve.
