Paella Barclelona

  • 1 Cup Uncooked Rice
  • 2 Medium Chicken Breasts -- cooked & diced
  • 1 Can Artichoke Hearts -- small can
  • 1 Cup Peas
  • 1 Large Onion -- chopped
  • 2 Medium Red Bell Pepper -- chopped
  • 3 Cloves Garlic
  • 1/2 Cup Tomato Puree
  • 3 Cups Chicken Stock
  • 3 Tablespoons Olive Oil
  • 1 Pinch Saffron
  • 1 Teaspoon Paprika
  • Salt And Pepper -- to taste
  • Parsley -- for garnish
  • Saute onion & garlic in olive oil unti transparent. Add all but parsley & artichokes. Simmer gently 25 minutes until rice is done. Arrange artichokes & parsley on top. Serve.
