Pasta With Vegetables

  • 1 Pound Spaghetti
  • 3 Medium Potatoes -- peeled and cubed
  • 1/3 Cup Olive Oil
  • 2 Small Red Bell Pepper -- chopped
  • 2 Cloves Garlic -- finely chopped
  • 1 Cup Peas
  • Salt And Pepper -- to taste
  • Parsley -- for garnish
  • Cook pasta as directed. Drain. Saute potato in half the olive oil until tender. Set aside. Saute peppers and garlic in remaining olive oil until softened. Add peas and toss for 2 minutes. Add potatoes and season with salt and pepper. Toss with pasta and garnish with parsley. Serve.
