Madeira Onion Soup

  • 3 Pounds Yellow Onion -- Sliced
  • 3 Tablespoons Olive Oil
  • 1 Tablespoon Butter
  • 6 Whole Cloves
  • 1 Teaspoon Paprika
  • 5 Cups Beef Broth
  • Salt And Pepper -- To Taste
  • 4 Large Eggs -- Slightly Beaten
  • 1/4 Cup Madeira
  • Saute onions in oil and butter until lightly browned about 15 minutes. Add cloves, paprika and broth. Cover and simmer for 1 hour. Uncover and simmer for 30 more minutes. Season with salt and pepper. Mix a bit of hot broth into the eggs. Stir into kettle. Cook for 4 minutes. Add Madeira, stir and serve.
