Onion Soup
3 Pounds Yellow Onion -- Sliced
3 Tablespoons Olive Oil
1 Tablespoon Butter
6 Whole Cloves
1 Teaspoon Paprika
5 Cups Beef Broth
Salt And Pepper -- To Taste
4 Large Eggs -- Slightly Beaten
1/4 Cup Madeira
Saute onions in oil
and butter until lightly browned about 15 minutes. Add cloves,
paprika and broth. Cover and simmer for 1 hour. Uncover and simmer
for 30 more minutes. Season with salt and pepper. Mix a bit of hot
broth into the eggs. Stir into kettle. Cook for 4 minutes. Add
Madeira, stir and serve. |
