Oxala's Rice (Brazil)

  • 1 Small Onion -- chopped
  • 1 Medium Dried Crushed Malagueta Chile -- or thai chile
  • 2 Tablespoons Olive Oil
  • 1 Cup White Rice
  • 1/2 Cup Boiling Water
  • 1 1/2 Cups Coconut Milk
  • Saute onion and chile in oil until onion is soft. add rice and continue to saute until rice turns opaque. combine water and coconut milk. bring to a boil. add rice mixture and bring back to a boil. lower heat and cover, simmer for 30 minutes or until rice is tender. fluff rice and serve.
