Osh (Afghanistan)

  • 1 Can Beans
  • 1 Large Onion -- chopped
  • 2 Cloves Garlic -- finely chopped
  • 1/4 Cup Olive Oil
  • 1/2 Teaspoon Crushed Red Pepper
  • 1/2 Cup Tomato Puree
  • 1/2 Cup Water
  • 1/8 Teaspoon Dried Mint
  • 1/2 Teaspoon Dried Dill Weed
  • Salt -- to taste
  • 1/4 Pound Egg Noodles
  • 1/2 Cup Plain Yogurt
  • 1/2 Cup Water
  • Cook beans separately as directed by package instructions. Saute onions and garlic in oil until light brown. add crushed red pepper. when it turns dark red add puree, water, mint, dill and salt. cook noodles and drain. combine beans and bean broth with noodles and tomato sauce mixture. Thin the yogurt with the remaining water and add to mixture. adjust seasoning.
