Old Danish Stew
3 Tablespoons Butter
2 Large Onion -- thinly sliced
1 Cup Flour
2 Cups Beef Broth
3 Pounds Bottom Round Steak --
cubed
2 Tablespoons Vinegar
1 Teaspoon Salt
1 Teaspoon White Pepper
3/4 Cup Baking Powder
1/2 Teaspoon Salt
1 Tablespoon Parsley -- minced
1/2 Teaspoon Marjoram
1 Pinch Pepper
3 Tablespoons Butter
2 Tablespoons Ice Water
Saute onons in butter 10
minutes. Add 3 tabs flour, stir until smooth. Add broth and bring to
boil. Saute meat in heavy skillet sprinkled iwth vinegar. Add to
sauce along with salt and pepper. Cover and cook on lkow 2 hours.
Sift baking powder, remainign four and 1/2 teasppon salt inbowl. Add
parsley, jarjoram, peper and mix well. Cut in the butter. Add ice
water and toss lightly until a ball of dough forms. Shape into small
balls and drop into stew. Cover and cook 35 minutes more.l
Serve. |
