Okra
Etouffee
- 2 Pounds Okra -- sliced
- 1/4 Cup Olive Oil
- Salt And Pepper -- to taste
- 1 Large Onion -- chopped
- 1 Medium Bell Pepper --
chopped
- 2 Cloves Garlic -- chopped
- 1 Pound Smoked Sausage --
sliced
- 2 Large Tomatoes -- chopped
- 1 Teaspoon Cayenne
- 1 1/4 Cups Water
- Rice -- cooked
Saute okra in oil about 20
minutes. salt lightly, and then add: onion, pepper and garlic. Saute
until onion is soft. Add sausage, tomatoes, cayenne and pepper.
Saute until sausage is browning. Stir in water and simmer 30
minutes. Serve over rice. |
