Mirliton Bake

  • 2 Teaspoons Paprika
  • 2 Teaspoons Dried Pasilla Chilies -- ground
  • 2 Teaspoons Salt
  • 1 Teaspoon Cumin
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Ground Ginger
  • 1 Teaspoon Onion Powder
  • 1 Teaspoon Ground Ancho Peppers
  • 1 Teaspoon Dried Tarragon
  • 1/2 Teaspoon Ground Allspice
  • 1/2 Teaspoon Cayenne
  • 1/2 Teaspoon Black Pepper
  • 1/2 Teaspoon White Pepper
  • 2 Bay Leaves
  • 4 Medium Mirlatons
  • 1 Pound Lean Ground Beef
  • 2 Teaspoons Olive Oil
  • 2 Large Onions -- chopped
  • 2 Medium Bell Pepper -- chopped
  • 1/2 Pound Feta Cheese -- crumbled
  • 1/4 Cup Corn Meal
  • 4 Medium Jalapeno -- chopped
  • 1/2 Pound Farmer's Cheese -- grated
  • Cobine seasoning mix ingredients in a small bowl. Boil miritons until tender, about 30 minutes. Cut in half, remove seeds, dice. Mix groudn beef with 2 tablespoons of seasoning mix. Preheat oven to 350*. Heat oil in pot 4 minutes. Add beef and cook unitl nicely browned, about 8 minutes. Add onions, bell peppers, mirlitonjs and remainign seasoning mix. Cook 20 minutes. Stir in fta and corn meal. Cover and cook 3 mintues. Transfer to 9 x 13 inch pan. Sprinkle jalapenos over dish. Top with farmer's cheese. Bake until godlen brown, 25 mintues.
