BANANA
CAKE
7 eggs, separated 1 c sugar 1/4 tsp
salt 1 c mashed ripe bananas 3/4 c matzo cake flour 1/4 c
potato flour 1/2-1 c coarsely chopped nuts
The
Frosting: 1 egg white. beaten slightly 1/2 c plus 2 Tbsp
sugar Pinch of salt 3 Tbsp cold water
Beat egg yolks
with sugar until creamy. Combine salt, mashed bananas, cake flour
and potato flour. Add to beaten egg yolk mixture. Beat egg whits
stiff, adding a pinch of salt for quicker action, and fold into the
batter. Fold in chopped nuts lightly and turn the cake mixture into
a lightly greased 10-inch springorm pan. Bake 40-45 minutes or until
light brown on top, at 325 degrees. Cool on a rack. When cold,
decorate with a frosting that has been made in the following manner:
Combine frosting ingredients in order listed above, in the top of a
double boiler. WHile the wter in the lower pot is boiling, heat the
ingredients in the upper pot, mixing with a fork or rotary beater
for 7 minutes oruntil thick enough to
spread.
