Herb-Crusted Chicken
2 tablespoons fresh basil 2 tablespoons fresh
oregano 2 tablespoons fresh rosemary 2 tablespoons fresh
thyme 1 teaspoon salt 1/4 cup dry bread crumbs 1 (2-1/2 to
3-pound) chicken, cut into 8 pieces and skin removed Nonstick
vegetable spray
Preheat the oven to 425°F. In a
medium-sized bowl, combine all the ingredients except the chicken
and spray; mix well.
Coat a nonstick rimmed baking sheet with
nonstick vegetable spray. Completely coat the chicken pieces with
the crumb mixture and place 1 inch apart on the baking sheet. Spray
the chicken with nonstick vegetable spray and bake for 40 to 45
minutes, or until no pink remains and the juices run
clear.
