GUAVA DUFF



4 tbsp. butter
1 c. sugar
3 eggs, beaten
2 c. guava pulp (guava put through a sieve or food mill)
1/2 tsp. freshly grated nutmeg
1/2 tsp. cinnamon
1/4 tsp. ground cloves (optional)
3 c. flour
2 tsp. baking powder

Cream butter with sugar; add eggs, guava and spices. Beat until
smooth. Sift together flour and baking powder and add to guava
mixture. The dough will be stiff.
Place mixture in greased top of double boiler and cook over
boiling water, or use a can with a tightly fitting cover and
place can in tea kettle or pan of boiling water about 2/3 from
top of can. Steam 3 hours. Slice and serve with raisin sauce.
Yield 6-8 servings.


RAISIN SAUCE FOR GUAVA DUFF

1/2 c. brown sugar, packed
2 tbsp. cornstarch
1 c. boiling water
1/2 c. seedless raisins
1 tbsp. butter

Mix brown sugar and cornstarch. Add boiling water a little at a
time. Set over low heat. When it begins to boil, add raisins.
Let simmer 5 minutes, stirring once in a while. Remove from
heat. Stir in butter.
