English Stewed Tomatoes



In England these tomatoes are served at breakfast with eggs, bacon, mushrooms, and fried bread.

4 pounds tomatoes
4 T butter
salt and freshly ground pepper
1 teaspoon or more sugar

Peel tomatoes. Put in heavy skillet with butter and cook slowly, covered, till they
break down. Add salt and sugar and cook till well blended - about 10 minutes.
Correct seasoning and add more butter if you want.
