Chinese Beef Casserole

INGREDIENTS:

• 1 lb. ground beef
• 2 tablespoons oil
• 1 onion; chopped
• 1 cup celery, chopped
• 1 can cream of mushroom soup
• 1 can sliced mushrooms
• 1/2 cup water
• 1/2 cup rice
• 1/4 cup soy sauce
• 1/4 tsp. pepper
• salt to taste

METHOD:

Cook rice in boiling water for 10 minutes. Drain and set aside. Fry onions, beef and celery a few minutes. Add soup, mushrooms and liquid, water, rice, soy sauce, salt and pepper. Add beef mixture. Bake at 325 degrees for 1 hour.
